Vietnamese Cinnamon fig jam

My best friend Damian Has this amazing Fig tree in his back yard. At a certain time of the year i always stumble into his back yard, at the perfect time.
I used cassia for its strong floral aroma.
Vietnamese cinnamon is not really cinnamon, its closer to the Cassia family tree.
As you can see here is the time consuming process of pulling the figs, fighting with beetles, washing, stewing and reducing till 4 am, canning and memorizing and eating. So if you happen to come upon a jar. consider all these wonderful details. Overall i loved the way it came out. I wouldn't really call it a jam because of the lack of sugar. more of a really tight puree. Just natural sweetness, you know!
