There is this little amazing place that Vanessa and I love to go to. They have authentic plate from all of mexico. Vanessa had the Cochinita Pibil which is a slow roasted pork dish from Yucatan, Mexico. It envolves marinating the meat in strong acidic juices, coloring with annatto seed and roasting the meat wrapped in banana leaves. It should be prepared with a suckling pig hence the name cochinita. Of course i had the menudo. It only one of the places that i know that you could get cochinita pibil, so good! chef them out! La casa del taco
